Game days are full of excitement! There’s the night before food prep, edge-of-your-seat anticipation of the big win, and of course, clean up, after all is said and done. This season, I wanted to enjoy all the game day fun and festivities without the extra stress of intense prep and cleanup. I came up with a few vegan Game Day recipes to keep things simple and enjoyable.
Here are three vegan Game Day recipe ideas that are easy to prepare and make clean-up a breeze!
Vegan Açai Breakfast Popsicles
These delicious Vegan Açai Breakfast Popsicles are light and refreshing, plus they contain probiotics to support healthy digestion and gut health. Not only are they great for breakfast, but they can also double as a nutritious anytime snack as well. I used Sambazon Organic Acai Superfruit Packs (4-pk) with vegan yogurt, seeds, and fresh fruit, and I was so pleased with how they turned out. What you’ll need:
Sambazon Organic Acai Superfruit Packs (4-pk) (blended until smooth)
Vegan yogurt ( I added vanilla and maple syrup) 1 cup
Hemp seed 1 tbsp
Chia seed 1 tbsp
Nectarine (thinly sliced or finely chopped )
In a bowl, add vanilla and maple syrup (you can also use agave, Stevia, or any vegan sweetener of your choice) to your vegan yogurt. Add this mixture to your blender and blend with frozen Sambazon Acai Superfruit Packs. Grab your favorite popsicle mold and add your chopped fruit and seeds. Pour blended mixture into the molds and let freeze overnight.
Vegan Sweet Potato Fritters
For a yummy vegan Game Day lunch (these work well for dinner too!) I made these delicious Vegan Sweet Potato Fritters on O’Doughs Thins Bagels. The fritters are warm, savory, and have just the right amount of spice. I served them with an avocado lime dressing (that added a delicious herby flavor) and spinach greens. What you’ll need:
Sweet potato (grated) about 2 cups
Chickpea flour 3/4 cup
Red onion 1/3 cup
Kale 3/4 cup
Chili paste/chili oil blend 2 tbsp
Season to taste
Grate one large sweet potato (do not pat dry) and add to a mixing bowl with Chickpea flour and preferred seasoning. Lightly sauté red onion chili oil and kale together in a pan until kale is softened but not wilted. Add kale mixture to the mixing bowl and combine. Form into balls, then press into patties. Lightly brush or spray top and bottom with olive oil/cooking spray and air fry.
Avocado dressing
Garlic 1 clove
Avocado 1 whole
Olive oil 3 tbsp
Lemon 1 tbsp
Fresh Parsley 1/3 cup
Water 3 tbsp
Blend all ingredients together in a food processor until creamy and pourable. Serve on top of the fritters or on the side.
Vegan Ice Cream Cones

Use an ice cream scooper and scoop ice cream into cones and serve immediately.
