For the past few weeks, I’ve been thinking about fun ways to celebrate my daughter Aven’s birthday. With so many changes in the world right now, celebrations look quite different for all of us. I wanted to come up with something simple, yet fun, and decided on a small party at our home. To make the celebration extra special, I wanted to focus on a theme I knew she’d love, and unique surprises that would create lasting memories.
One of those unique surprises was making Cherry Nice Cream Cookie Sandwiches! I got the recipe from Julia’s Table Kid’s in the Kitchen eBook and used Julia’s Table Chocolate Chunk Cookies for the sandwiches! The recipe is vegan, and super easy to make. Aven even helped make a few for the party. The recipe calls for:
3 ripe, sliced and frozen bananas
2 cups of frozen cherries
3/4 of a cup of gluten free oat milk
1 tablespoon of agave syrup
1 teaspoon of vanilla
2 packages of Julia’s Table Chocolate Chunk Cookies
1/2 cup of mini dark chocolate chips
The directions are super easy:
- Blend the frozen bananas, cherries, oat milk, agave, and vanilla together.
- Pour the Cherry Nice Cream mixture into a loaf pan or dish, cover it, and set in the
freezer for at least two hours or prepare ahead of time and leave in overnight. - Once frozen, scoop nice cream out onto one cookie, then top with another.
- Afterwards, roll the edge of the cookie sandwich in chocolate chips. This recipe
should make six sandwiches! (You’ll want to either serve them immediately or put
them back into the freezer in an airtight container)
The Cherry Nice Cream Cookie Sandwiches were a major hit and I love how simple they are to make. Making them with Aven made the experience even more special. They went perfectly with her unicorn themed birthday party and satisfied the dietary requirements of our party goers. Julia’s Table Chocolate Chunk Cookies are vegan, gluten free, and non-gmo and so were the additional ingredients we used!
